あたしの日本語を直してくれて、ありがとう！日本語を磨くのが大好き！

The problem with the second sentence is that it seems to be lacking
something when put into Japanese. _ひらしんと一緒に_日本語を磨くのが大好き！ or
maybe
磨くことであたしの日本語が上達していくことがうれしい！ or might be
better.

Ah-ha, maybe ... あたしの日本語が上達していると思うと、うれしい！

Or... やっぱり、勉強する甲斐があるね！

Part of what you want to teach the student is that sometimes you just have
to say something differently in order to make it natural.
